Comfort Recipe: Spiced Vegan Sweet Potato Soup

We've been thinking a lot about comfort lately – especially as we notice signs all around us telling us to slow down, take pause, and take care of our bodies, minds, and spirit. Comfort can look and feel different for everyone. Comfort can be pleasure; it can be play. It can look like indulgence; it can look like restraint. Comfort can be abundant; it can be focused on rest. It can look like belly-aching thigh-slapping laughter, or it can feel like a full, deep, relaxing breath. Whatever comfort looks and feels like for you, we invite you to continue seeking that for yourselves. 

Here's a recipe for a spiced vegan sweet potato soup we made recently that felt like comfort in a bowl:

(Serves 2)
Ingredients:
  • 2 small sweet potatoes (about the size of your palm), roasted – we like Japanese sweet potatoes for this soup, but any kind will work
  • 1.5 cups of oat milk or soy milk 
  • 1/8 tsp ground nutmeg
  • 1/8 tsp ground clove
  • 1/8 tsp star anise or all spice
  • 1/8 tsp ground cinnamon
  • 1/8 tsp ground turmeric
  • 1 tsp fresh grated ginger
  • 1 tbsp honey or maple syrup, to taste
Tools: 
  • Medium-sized pot
  • Immersion hand blender or regular blender
Directions:
  • Add the oat or soy milk to a pot on medium heat and bring to a light simmer
  • Cut or break up the roasted sweet potatoes into smaller chunks and add them to the pot with the oat or soy milk
  • Add all of the spices and grated fresh ginger into the pot and simmer for 3-5 minutes. Do not bring to a full boil. You just want to thoroughly heat the soup through and let the ginger infuse
  • Use a hand blender and pulse the bigger pieces of sweet potato until everything is smooth and well-combined. If using a regular blender, put all of the pot's contents in the blender and pulse until smooth. 
  • Add honey or maple syrup to taste
Sweet potatoes are great for digestion and packed with tons of nutritional benefits. The spices and ginger add depth and so much warmth. This soup is all about restoring balance (and comfort!) in the body. We hope you enjoy.
